If I were to enrol onto the eLearning Nutritional Therapy Diploma Course and I had the time and opportunity to attend some lecture weekends, would this be possible?

As the attendance and distance learning courses have the same structure and delivery, you would be able to change over to the attendance options and vice versa. Once you have enrolled onto a specific course option you would be required to complete this course option during the course of that year and then you can transfer over after completing the year.  Only in certain cases one is allowed to transfer half way, this must be discussed with their personal tutors.
