Dr Carol Granger 

BSc (Hons) MSc, DProf, MRSB, CBiol, FBANT

Carol is a Registered Nutritional Therapist practicing in London and West Sussex, and a researcher at the University of Westminster, where she completed research for a professional doctorate on the practice of nutritional therapy for people affected by cancer. She is a chartered biologist with a degree in biochemistry and a Master’s in microbiology, and training in herbal medicine. Carol has worked in various healthcare roles throughout her career, including microbiology research, clinical diagnostics, medical technology and human tissue banking. Carol has served as a chair of NTEC, the accreditation body for training in nutritional therapy, and as a co-chair and trustee of the Research Council for Complementary Medicine. She is a guest lecturer on several nutritional therapy courses at degree and Master’s level.

Marie Polley

PGCHE, BSc (Hons), PhD

Marie holds a BSc in Biomedical Sciences, a PhD in molecular carcinogenesis and is a Reiki Master of 18 years.  She has worked in cancer cell biology at Imperial College, as a Research Fellow at Breast Cancer Haven, and as a Senior Lecturer in Health Sciences and Research at the University of Westminster.  Marie has spent the last 10 years of her career developing internationally used outcome measures to capture the patients' experience of cancer treatment and using this to inform more patient-centred support programmes for people affected by cancer.  Marie is also a leading researcher in Social Prescribing and regularly speaks at national and international conferences on this developing area of person-centred healthcare.  For the Marie has developed integrative oncology based CPD courses for complementary and integrative medicine practitioners and is on the board of the Society for Integrative Oncology.

Catherine Zollman

Catherine is medical director of Penny Brohn Cancer Care and a GP in Bristol. She is the cancer lead for Bristol clinical commissioning group and an honorary lecturer at the University of Bristol. Catherine trained in oncology to registrar level and then undertook an integrative medicine fellowship at the University of Arizona. As part of her distinguished career in integrative medicine she gained the oncology award from Association for Research on Integrated Oncology Therapies (ARTOI). Catherine has training in acupuncture, nutrition and mindfulness, she is an honorary fellow of the Research Council for Complementary Medicine and a trustee of the British Holistic Medical Association. Penny Brohn Cancer Care understands that cancer impacts everything and the number affected is increasing.  Its Bristol Whole Life Approach supports people with cancer and their close supporters to participate in their health and wellbeing, and find the resources to thrive, before, during and after treatment. It explores areas such as diet, exercise, relationships and managing stress, through free courses, one-to-one therapies, groups, a Treatment Support Clinic and national helpline.

Christine Bailey


Food demo days speaker

Christine is a well- known nutritionist, chef and author of over 13 recipe and health books including Go Lean Vegan. Christine runs a range of cookery days on healthy eating, addressing various health conditions and special diets and regularly lectures on food and nutrition. She also presents at national shows and conferences and sees clients at her clinics in Reading and Harley Street, London, as well as running workplace sessions for Corporates and Health Clubs.

Belinda Blake

Belinda is an experienced nutritional therapist and lecturer with a passion for food and a creative approach to teaching. She has long been fascinated by the traditions behind the use of foods for healing and so her workshops not only embrace the science that helps us to understand their properties, but also their rich anecdotal histories.

Belinda has a special interest in women and children’s health. Along with her colleague, Nicola Moore, Belinda has developed the Eat Yourself Fabulous teen programme which has been designed to help teenage girls make the connection between what they eat and how they feel. For younger children, Belinda runs the Caterpillar’s Kitchen Cooking Clubs which teach nutrition in a relaxed and friendly environment, gently motivating children to try new foods and develop their cooking skills whilst having fun.

Kate Delmar Morgan

Kate is a registered Nutritional Therapist practicing in South West London.  She qualified in 2006 with a first class Honours degree in Health Sciences: Nutritional Therapy. With a special interest in learning disorders, Kate started working immediately with children and their parents through the Hyperactive Children’s Support Group and has been advising families in private practice ever since and she lectures in child nutrition at ION. Kate also sits on the Professional Practice Committee for BANT with a role in upholding the standards of the Nutritional Therapy profession and is a BANT Accredited Supervisor running supervision groups for Nutritional Therapists.  Kate was the founder and joint director of a nutrition consultancy working with schools & children for 6 years and she contributes to nutrition related articles for a number of publications.

Jules Cattell

Jules is an experienced nutritionist and Clinical Tutor on the MSc Nutritional Therapy course at the University of Westminster. Over 12 years experience in clinical practice. She has a particular interest in children’s health issues and having trained at the Autism Research Institute in California she now runs a monthly clinic in London with behavioural optometrist Smita Trivedi. Jules also sees children with attention deficit hyperactivity disorder (ADHD) and dyslexia.

Dr Rachel Nicoll

Rachel Nicoll came to nutritional and environmental medicine after suffering mercury poisoning which had chronic health consequences. She is an ION graduate, completed the MSc in Nutritional Medicine at Surrey University and obtained a PhD from Umea University, Sweden. At the same time she is attempting to bring the cause of environmental medicine more into public and academic consciousness and is a regular lecturer on ION short courses. Rachel was on the committee of the British Society for Ecological Medicine and organised their November 2017 seminar entitled ‘Reversing obesity and type 2 diabetes: Failing with diet, Succeeding with fasting’, as well as their March 2014 conference on Electromagnetic Radiation and Health. She is now employed in Umea University, Sweden, working on diabetes and cardiovascular disease studies, and in Helsinki University, Finland, investigating the biochemical causes and treatments for obesity.

Sarah Huges

Sarah is a Medical Herbalist and a Nutritional therapist who has been in practice since 2006, both in Ireland and the North of England.  She has lectured on the Medicinal Plants and Functional Foods MSc at Newcastle University and speaks regularly on BBC radio Newscastle.  She also runs workshops at Dilston Physic Garden, Northumberland.

Caroline Gaskin

Caroline is a homeopath and holistic health coach with 20 years' experience. Early in her career she was based at the Active Birth Centre and ran drop–in clinics for new mums and babies, gave natural health talks and taught homeopathy to midwives and doulas. She has worked with Peter Walker Baby Massage Education and facilitates her own workshop series on a range of health issues and homeopathy. She has lectured extensively at the College of Practical Homeopathy, Southern College of Homeoapthy, the Centre for Homeopathic Education and the Homeopathy Graduate Academy and also tutors and supervises students and graduates.
