Raspberry Surprise Chocolate Porridge Credit: Nicola Moore, DipION, mBANT, CNHCReg nicola-moore.com @NicolaMooreNT nicolamoorenutrition Ingredients: ½ cup of oats ½ cup of ground almonds 2 tsp of cocoa power 1 tsp maple syrup or honey 3 cups of the milk of your choice A handful of frozen raspberries Directions: Heat all the ingredients except for the raspberries in a pan on the stove. Bring to the boil and simmer for 4-5 mins, stirring all the time. Add more milk if it becomes too stodgy. When the porridge is cooked, transfer to a bowl, scatter the frozen raspberries on top, then submerge them into the porridge using the back of a teaspoon. The key with this porridge is to transfer it to the bowl when it’s piping hot as that way the raspberries defrost and go nice and gooey for a lovely sweet surprise as you eat!
