Serves 4

Ingredients

  • 500g minced turkey
  • 400g canned black beans, drained and rinsed
  • 200g canned sweet corn, drained
  • 1 large onion, diced
  • 2 large handfuls of baby spinach, roughly chopped
  • 2 cloves garlic, minced
  • 400g canned diced tomatoes
  • 2 tbsp milled flaxseeds
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh coriander, chopped, for garnish
  • 200ml stock – veggie or chicken

Method

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the minced turkey to the pot and sautee until browned, breaking it up with a wooden spoon as it cooks.
  3. Stir in the chili powder and cumin and cook for another minute until fragrant.
  4. Add the diced tomatoes, black beans, sweetcorn, and water or chicken broth. Season with salt and pepper.
  5. Bring to a simmer for 20-30 minutes, stirring occasionally. 
  6. Stir in the milled flaxseed.
  7. Serve the chili garnished with fresh coriander.
